I found several the other day and finally got around to cracking one. It was with some trepidation because other iterations of this beer had a strong DMS (creamed corn) nose that made them borderline undrinkable. I was pleasantly surprised with the bottle I tasted. Though highly carbed for a low-gravity, English-style beer, it was pleasant. Prominent roast, with undertones of raisin and chocolate, dry. I can definitely imagine a better version of this, but it is not horrible in its current state.Anonymoushttps://www.blogger.com/profile/11326413037082699484noreply@blogger.comtag:blogger.com,1999:blog-1113856362381562925.post-2216973678177986922013-07-22T08:00:23.769-07:002013-07-22T08:00:23.769-07:00If/when I re-brew this one, I'll probably slig...If/when I re-brew this one, I'll probably slightly reduce the chocolate malt and slight increase the special roast. Although I enjoyed the results of the above recipe, it had a different character than Cain's Finest Bitter. It is darker and drier. In comparison with CFB, that may be a good thing for some palates.Anonymoushttps://www.blogger.com/profile/11326413037082699484noreply@blogger.comtag:blogger.com,1999:blog-1113856362381562925.post-77440809527788112442013-04-05T14:19:37.170-07:002013-04-05T14:19:37.170-07:00Hopefully my hop garden will do some catching up w...Hopefully my hop garden will do some catching up with yours this year. There's a ton of yeast in suspension right now, and it needs time to metabolize fermentation by-products. Unfortunately, WLP099 is a low flocculating yeast, so the thought of using some kind of fining had occurred to me but I'll cross that bridge when I come to it. I have a hard time waiting for beer to get good, so I'm thinking 3 months minimum, 6 would be better, and a year even better. If it's just a "hot" beer, then perhaps that will subside with time. I still plan to add oak though.Anonymoushttps://www.blogger.com/profile/11326413037082699484noreply@blogger.comtag:blogger.com,1999:blog-1113856362381562925.post-39951190434258181072013-03-24T18:25:00.075-07:002013-03-24T18:25:00.075-07:00How long do you think you'll try to age this b...How long do you think you'll try to age this before partaking? Perhaps I shouldn't.

2. My last two lagers were done with this concept somewhat in mind. What turned out to be a dopplebock, done with a decoction mash, and a dunkel, done with different malts attempting to achieve a similar taste profile. IMHO the decoction brew turned out to be much more complex and smooth beer. The favorite of my (3) lagers to date. I had a difficult time coming up with a name and meant to talk about my struggle to find an appropriately significant name. I was riffing off of the America song, "Horse With No Name," but I failed to complete the thought.
